The Meal Management laboratory class (NTN 332) operates the Oakley Dining Room.

This class is a requirement for students majoring in Nutrition, Dietetics and Food Management and an elective for students with a major in Family and Consumer Science Education.

Each week a different student serves as the Oakley manager responsible for the planning and production of the meal. The manager is also responsible for advertising the menu by designing and publishing a web page. Other students in the class are responsible for preparing and serving the meal as instructed by the manager.

Our emphasis is to meet educational goals for the students while providing a healthy, appetizing lunch to our customers in inviting surroundings. The meals, excluding dessert, provide no more than 1000 Calories and meet the Dietary Reference Intake recommendations with 20-35% of the Calories from fat and this being primarily unsaturated fat. Customers have a choice of regular or light dessert. Meal prices are usually $7.00 but may vary depending on the menu. The price includes dessert and beverages.

We have seating for 32 customers each week. In order to meet our financial obligations, we ask that you call to make reservations and send your payment in advance to guarantee your place. If you are unable to come, please call to cancel your reservation far enough in advance to allow someone else to take your place. The number to call for reservations is (270)-809-3387
