Constitution Day 2007

Winning Recipe by Robin Thweatt

Ingredients: · 6 medium size Granny Smith apples · ¾-1 cup sugar · 1 tsp. cinnamon · 1 tsp. nutmeg · 1 1/2 tbsp. butter · 3 tbsp. corn starch · Your favorite pie crust

Preheat oven to 400°

For the filling: Peel apples, quarter them, remove cores and slice ¼” thick.

If apples are dry, sprinkle with lemon juice. Use the smaller or larger amount of sugar according to the sweetness of apples and desired taste.

In a separate bowl, mix together sugar, cinnamon, nutmeg, and corn starch. The cornstarch thickens the filling to keep it from being too watery.

Add mixture to apples and stir together until apples are covered. Pour into bottom pie pan (crust) making sure to get all of the filling out of the bowl. Make sure apples are in pie pan (crust) evenly.

Cover with top crust and cut slits in it. Bake until crust is nicely browned and apples are cooked (test with a fork 30-40 minutes).

When pie has cooled, sprinkle fresh layer of sugar on top. Serve warm or cold…may be topped with cream, whipped cream, or ice cream.

Yum!
